Homemade Pork Tocino is a Filipino-style sweet cured pork made by marinating thinly sliced pork butt in a sugar and spice mixture, traditionally tinted red, then cooked until tender and caramelized. The final dish offers sweet, garlicky pork with a tender, slightly chewy texture and a glossy, sticky finish.

Description

This recipe begins by evenly massaging thinly sliced pork butt with a marinade of sugar, salt, garlic powder, black pepper, and a few drops of red food coloring to mimic the traditional bright appearance. The pork is refrigerated overnight to cure, allowing the flavors to penetrate and the meat to develop its characteristic sweetness and seasoning.

For cooking, the pork with its marinade is simmered cover in water until the meat is tender and the water is absorbed. Then, canola oil is added, and the pork is cooked uncovered while stirring regularly to caramelize the exterior and create a sticky glaze. This results in tender meat with a sweet, savory crust and red-tinged sheen.

This tocino is typically served hot and pairs well with rice and eggs as part of a classic Filipino breakfast or any meal needing a sweet-savory pork addition.

  • 2 pounds pork butt sliced to ¼-inch thick
  • 1 cup sugar
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • ¼ teaspoon black pepper
  • 2 drops red food coloring
  • 1 cup water
  • 2 tablespoons canola oil

Instructions

  1. In a bowl, combine pork, sugar, salt, garlic, pepper, and red food coloring. Massage meat with curing mixture until well-distributed and evenly colored.
  2. Store in a covered container or ziplock bag and refrigerate overnight to cure.
  3. In a pan over medium heat, add pork including marinade and enough water to cover. Bring to a boil.
  4. Lower heat, cover and simmer until meat is tender and cooked through, adding more water in ½ cup increments as needed. 
  5. When water is completely absorbed and meat is tender, add oil and cook, stirring regularly, until meat caramelizes. Serve hot.

Notes

  • Slice pork across the grain to achieve a tender chew in the finished tocino.
  • To avoid red food coloring, substitute with about 1 teaspoon of atsuete powder or ¼ cup of banana ketchup for the traditional color and flavor.
