Homemade Rice Cakes

These Homemade Rice Cakes combine ground rice with eggs and flour to create a crispy, baked treat. You can tailor the flavor towards savory with parmesan cheese and salt, or sweet with cinnamon and a sugar substitute like Truvia. Baking in a donut pan or muffin tin gives them shape and a crunchy exterior after 40-50 minutes in the oven.

Description

Homemade Rice Cakes are made by grinding uncooked rice into a flour-like texture and mixing it with eggs, flour, and flavorings such as parmesan cheese or cinnamon. The batter is poured into a greased pan or silicone molds and baked at 350 degrees Fahrenheit until the cakes develop a browned, crispy exterior. The mix of egg and flour helps bind the rice base, giving a sturdy yet crisp finish. This recipe allows for either sweet or savory variations by adjusting the added spices and sweeteners.

The texture is light but firm, with crispy edges formed during baking. These rice cakes provide a way to use rice in a new format and can be served as snacks or part of a meal depending on chosen flavorings. The baking step is longer when using standard pans, but thinner donuts take about 20 minutes to cook through.

For a different experience, shaping the rice mixture in a donut pan creates a thinner cake that crisps faster. Using silicone pans eliminates the need for greasing. Experimenting with different spices or cheeses can customize the cakes to suit varied tastes or dietary needs.

  • 1 1/2 cups water
  • 2 egg
  • 2 tablespoons all-purpose flour you may use Gluten free flour
  • Parmesan Cheese flavorings of your choice; savory: 2 tsp parmesan cheese, 1 tsp salt and pepper; sweet: 2-3 envelopes Truvia, 1 tsp cinnamon
  • salt
  • black pepper
  • Truvia
  • cinnamon

Instructions

  1. Preheat Oven to 350 Degrees Fahrenheit
  2. Place the uncooked rice in the food processor or blender and process until ground
  3. Place the rest of ingredients in a high-speed blender or food processor
  4. Pour the mixture into a GREASED donut pan, muffin tin or any other shaped pan (if using silicone, there's no need to grease)
  5. Bake for 40-50 minutes or until they tops are brown and all sides are completely crispy

Notes

  • You can customize flavorings: use savory ingredients like parmesan and salt, or sweet spices like cinnamon and a sugar substitute.
  • Shaping the batter into a donut pan results in thinner cakes that bake in about 20 minutes instead of 40-50.
  • If using silicone molds, greasing the pan is unnecessary.
