Homemade Sour Gummy Bears (Real Fruit)
Description
This recipe for Homemade Sour Gummy Bears blends defrosted frozen fruit puree with water, honey, and fresh lemon juice to build a flavorful base. Gelatin is slowly whisked into the simmering fruit mixture, transforming it from grainy to smooth as it fully dissolves. After straining to remove solids and bubbles, the liquid is poured into silicone molds and chilled until firm. Coatings of sugar and citric acid add sour notes that complement the fruit.
The use of real fruit puree imbues the gummies with natural flavors. Adjusting citric acid amounts customizes sourness. The gelatin ensures a firm yet chewy texture typical of gummies. Using a mold on a baking sheet provides easy handling during setting.
Without a mold, the mixture can be set in a lined baking tray and cut into shapes with cookie cutters. Vegans can substitute honey with agave and gelatin with agar agar, a plant-based gelling agent, though texture may differ.
Ingredients
- 1 cup frozen fruit 200g/7oz, defrosted; e.g. strawberries, blueberry, raspberry
- ⅓ cup water 70g/3 floz
- 1 tablespoon lemon juice fresh
- 2 tablespoons honey (or agave)
- 4 teaspoons gelatin unflavored
- 1/2 cup sugar icing or regular, 4oz/115g
- 1-3 tsp citric acid
Notes
- If no silicone mold is available, pour the mixture into a lined baking tray and cut into shapes once set.
- For vegan gummies, substitute honey with agave syrup and replace gelatin with agar agar powder.
