Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 cups milk
  • 2 large eggs separated
  • cup oil canola, or vegetable

Instructions

  1. In a large bowl, add flour, baking powder, and salt, whisk to combine.
  2. Separate eggs whites and yolks into 2 bowls.
  3. Add milk, egg yolks, and oil to dry ingredients and whisk until smooth.
  4. In a small bowl, whisk the egg whites until very foamy.
  5. Fold egg whites into waffle batter until incorporated, but don’t overbeat.
  6. Heat waffle iron and spray with non-stick cooking spray.
  7. Using a pourable measuring cup or ladle, fill waffle iron with batter.
  8. Cook for 5-8 minutes or until golden brown, depending on a waffle maker.
  9. Remove and serve immediately with syrup, powdered sugar, or fruit.
