Honey Mustard Dressing
Description
This Honey Mustard Dressing combines Dijon mustard, honey, cider vinegar, vegetable or olive oil, salt, and black pepper. The simple preparation involves shaking the ingredients vigorously in a jar until the honey is fully incorporated and the dressing appears smooth. Salt levels are intentionally high before dressing greens because dilution with salad ingredients reduces perceived saltiness.
The dressing's flavor is a pleasantly sharp mustard tang balanced by the sweetness of honey and acidity from cider vinegar. The oil provides body and smoothness, making it suitable for leafy green salads or as a dipping sauce. It stores well in the refrigerator for about three weeks if ingredients remain fresh.
The recipe includes quantities for both a big batch to keep and a smaller batch suitable to dress about four servings of salad. Adjusting the balance of honey, vinegar, and salt allows personal taste preferences to be accommodated.
Ingredients
Big Batch to Keep (1 cup)
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1/4 cup cider vinegar
- 1/4 cup vegetable oil or olive oil
- 1 tsp salt
- black pepper
Single side salad batch (makes 1/3 cup, enough for a side salad for 4 ppl)
- 1 1/2 tbsp Dijon mustard
- 1 1/2 tbsp honey
- 1 1/2 tbsp cider vinegar
- 1 1/2 tbsp vegetable oil or olive oil
- 1/4 tsp salt
- black pepper
Instructions
- Place ingredients in a jar and shake well until you can't see any honey on the base of the jar. Adjust sweet (honey), sour (vinegar) and salt to taste.
- Keep for 3 weeks in the fridge in an airtight jar. (As long as the shelf life of your ingredients is greater than 3 weeks).
- Single side salad: Drizzle over 4 big handfuls of leafy greens and other salad of choice.
Notes
- The 1 teaspoon salt amount may seem high but balances intense Dijon and vinegar flavors after mixing into salads.
- The dressing keeps up to three weeks refrigerated in an airtight jar as long as ingredients have sufficient shelf life.
- Shake well until honey is fully dissolved for a smooth, even dressing.
- Adjust sweetness, acidity, and saltiness to taste after mixing if desired.
