Honeydew Agua Fresca with Raspberries Recipe

Cool off with this light and fruity Honeydew Agua Fresca with Raspberries! The combo of juicy melon, raspberries, and lime makes it the perfect drink for sunny days.

Ingredients
- 1 5 lb ripe honeydew melon
- 1/2 cup Baking sugar also called "superfine" or "ultrafine"
- 5 limes juiced
- 1 cup raspberries for garnish
Instructions
- Cut the melon in half, remove the seeds with a spoon, then cut the flesh from the peel and slice it into chunks. Place half of the melon in a large blender and process until liquefied. Pour the liquefied melon into a fine mesh sieve set over a large bowl.
- Use a spatula to press the melon into the sieve, allowing the juice to squeeze through into the bowl. Occasionally scrape the flesh off the sieve to allow more juice to transfer to the bowl. Repeat with the remaining melon.
- Transfer the melon juice to a large pitcher and add four cups of water.
- Combine lime juice and sugar in a small bowl, then stir until the sugar is dissolved. Pour the lime-sugar mixture into the pitcher and stir well. Serve over ice, garnished with raspberries.
Notes
- If you don't have baking sugar, you can make your own by blending granulated sugar to make the crystals smaller.
- Store the Agua Fresca in an airtight container or pitcher in the fridge for up to 3 days. Stir well before serving as some separation may occur.
- Freezing is not recommended as the texture and flavor may change, but if you want to freeze it, pour it into ice cube trays for a refreshing, slushie-like treat later.
