Ingredients
- 1.4 pounds hot Italian sausage
- 6 cups raw spinach
- 1 medium green bell pepper
- 1 medium red bell pepper
- ½ medium onion
- 1 can tomatoes with jalapenos
- 2 cups beef stock
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 2 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon kosher salt
Instructions
- Rip sausage into chunks and cook it all the way through.
- Add sliced peppers, tomatoes, beef stock, and spices to crock pot. Put sausage on top and mix it well.
- Fry up your onions and garlic, add to crock pot when translucent.
- Add bed of spinach on top, let cook for 3 hours on high.
- Stir after 3 hours, set to low and cook for additional 2 hours.
