Instructions

  1. Wash and dry zucchini and cut off stem and bottom tip. Slice according to the cooking method you would like to do.

To Roast (or Bake):

  1. Brush with olive oil and season with salt or grill seasonings. Sprinkle with breadcrumbs and/or parmesan cheese if desired.
  2. Bake at 400-degrees for 20-25 minutes or until tender.

To Sauté:

  1. Melt butter in a large skillet over medium-high heat and add zucchini slices. Sauté for 10-15 minutes or until tender. Season with salt and pepper.

To Grill:

  1. Cut zucchini into halves. Brush with butter or oil grill for 5-7 minutes per side or until tender. Season with salt with each turn.

To Air Fry:

  1. Brush with olive oil and sprinkle with salt. Roll in breadcrumbs if desired. Spray with cooking spray to help keep breadcrumbs on. Air fry at 375-degrees for 8 minutes. Season more after flipping if needed.

Bonus: Zucchini Chips

  1. Slice zucchini very thin.
  2. Spray air fryer basket with cooking spray and air fry at 250 degrees F for 8 minutes, toss, then air fry another 2-3 minutes until lightly crispy.
  3. The air fryer may blow the chips around and that's ok. Just stir around every few minutes to redistribute if needed.
