Instructions

How to Cut an Eggplant into Rounds

  1. Wash the eggplant with cool filtered water then dry it off.
  2. Place the eggplant on a cutting board. Slice the stem off the top of the eggplant.
  3. Next, with the eggplant lying on its side, slice ½-an inch round circle off of the eggplant. Continue to slice until all rounds have been sliced off.

How to Cut an Eggplant into Cubes

  1. Slice off the top and bottom of the eggplant. While the eggplant is standing up, slice the eggplant into 4 long pieces.
  2. Place the eggplant down on the cutting board flat side down, and cut more slices crisscross against the lengthwise slices.
  3. Continue to cut against the lengthwise slices until you have diced the eggplant into several diced pieces.

How to Slice an Eggplant into Strips

  1. Slice the top and bottom off off the eggplant with a knife. Next, cut the eggplant in half from top to bottom.
  2. Next, cut the eggplant into 4 pieces from the two halves. After cutting the eggplant into 4 pieces, slice the eggplant into 4 more even lengthwise pieces until you have cut all of the eggplant slices.

Notes

  • Cut and slice the eggplant for not only baking and using the stovetop with the oven, but prepared eggplant is also great for grilling.
  • Be sure the eggplant is ripe but not too ripe.
  • Freeze the sliced or cut eggplant in freezer-safe storage bags in the freezer for up to four months. Thaw the eggplant when you are ready to use it–it's great for meal prep.
  • Use the eggplant for all of your vegetarian needs when you do not want to use meat. An eggplant is a great option for meatless lasagna.
