Huevos rancheros or ranch-style eggs are a true Mexican institution and a complete meal with eggs and tomatoes that is mainly served at breakfast.

Ingredients
Sauce
- 3 tomatoes (ripe), peeled, and halved
- 1 scallion , roughly chopped
- 2 cloves garlic , peeled
- 1 Serrano chili pepper , stemmed, seeded, and halved
- salt
- freshly ground pepper
Huevos Rancheros
- 4 corn tortillas
- 4 eggs
- 2 oz. fresh cheese , crumbled
- 1 bunch cilantro , roughly chopped
- 14 oz refried beans (canned)
- 1 avocado , sliced (optional)
- vegetable oil

Instructions
Sauce
- In a blender, mix the tomatoes, pepper, fresh onion, garlic until a homogeneous sauce.
- In a saucepan, heat a little oil, and simmer the sauce over low-medium heat for about 15 minutes stirring regularly.
- Season with salt and pepper. Stir well.
Tortillas
- In a skillet, heat 4 tablespoons of oil over medium heat. Fry the tortillas one minute on each side.
Eggs
- In another skillet, heat 6 tablespoons of oil and fry the whole eggs (sunny side up). Season with salt and pepper.
Assembly
- Place 2 corn tortillas in each plate.
- Add the refried beans and half of the sliced avocado (optional) on the side.
- Place two corn tortillas. Add one egg on top of each tortilla then cover with the tomato sauce.
- Sprinkle with crumbled fresh cheese and cilantro.
- Serve immediately.
