Iced Molasses Cookies

These Iced Molasses Cookies are packed with warm spices and a dash of orange juice with a sweet vanilla icing drizzled on top.

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup butter 12 tablespoons
  • 1 1/4 cups granulated sugar divided
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange juice
  • 1/4 cup molasses not blackstrap

Icing

  • 1/2 cup powdered sugar
  • 2-3 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

Cookies

  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Set aside.
  2. Sift the flour, salt, cloves, cinnamon, baking soda, and ginger in a mixing bowl. Set aside.
  3. In a large bowl, add the butter and 1 cup of sugar and beat together until fluffy.
  4. Add the egg and vanilla and beat until the egg is incorporated.
  5. Add the molasses and orange juice to a small bowl. Stir to combine.
  6. Alternate adding the dry ingredients and the molasses mixture, beating in each addition before adding the next.
  7. Using a tablespoon cookie scoop, scoop the cookie dough and roll them into a ball.
  8. Add the remaining sugar to a small bowl.
  9. Roll the balls of cookie dough in the sugar until completely coated.
  10. Place the cookies 2 inches apart on the prepared cookie sheet and bake for 8-10 minutes. Allow cookies to cool for 5 minutes before transferring to a cooling rack.

Icing

  1. Add the powdered sugar, 2 tablespoons of heavy cream, and vanilla extract to a medium bowl. Whisk together.
  2. Mix in an additional 1-2 tablespoons of heavy cream until the icing is thick but drippy.
  3. Drizzle the icing over each cookie and set aside to harden.
  4. Store in an airtight container at room temperature.
