Instructions

  1. Wash the apples, pears, and oranges. No need to peel the fruit.
  2. Quarter the fruit and place it into the instant pot. Add the cranberries, cinnamon sticks, star anise, nutmeg, maple syrup, and enough water to completely cover the fruit.
  3. Close the lid and turn the valve to seal, then cook on high pressure for 15 minutes. It will take about 20 minutes for the pressure to rise and start the cooking process.
  4. Once the timer goes off, allow the pressure to release naturally, which will take 15-20 minutes.
  5. Remove the lid and take out the oranges, cinnamon sticks, nutmeg, and star anise. Mash the remaining fruit with a potato masher.
  6. Strain the fruit and liquid through a fine-mesh sieve. Use the back of a wooden spoon to press the rest of the juice out of the soft fruit pulp. Serve warm or chilled.

Notes

  • Storage: You can keep the cider in the fridge for up to a week.
  • Freezing: The cider also freezes very well for up to 3 months. Let it cool completely before transferring to a freezer-safe container. Leave at least an inch from the top of the container to the liquid has room to expand as it freezes.
  • If your apples or pears are on the medium to small side, increase the amount to 5 apples or pears.
