This chicken and rice soup recipe is such a quick and easy weeknight dinner that tastes amazing! Make it in an Instant Pot or on the stove-top.

- 1 ½ cups chicken raw, diced
- ½ cup rice uncooked
- 1 cup carrots
- ½ cup onion
- ½ cup celery
- 6 cups chicken broth
- 1 teaspoon parsley
- ½ teaspoon salt
- ¼ teaspoon pepper

Instructions
For the Instant Pot
- Add all of the ingredients to the Instant Pot.
- Cook on manual high pressure for 2 minutes.
- Allow to naturally release.
For Stovetop
- Add all ingredients to a large pot.
- Bring to a boil and simmer until chicken is cooked through and rice is cooked about 15-20 minutes.
