Description
This Instant Pot Chicken Congee simplifies the traditional Asian rice porridge by cooking jasmine rice with chicken broth, water, minced garlic, and sliced ginger directly in a pressure cooker. A whole chicken breast is added to infuse the dish with subtle chicken flavor and protein. The cooking process creates a thick, porridge-like consistency where the rice grains have broken down to yield a creamy texture.
The congee’s flavor is mild and comforting, seasoned simply with salt and white pepper to allow the gentle flavors of ginger and garlic to come forward. Once cooked, the chicken breast is shredded and mixed back into the pot, distributing the tender chicken evenly.
Serving suggestions include garnishing with sesame oil for richness, green onions for freshness, and fried shallots or chili oil for added aroma and heat. Slices of yu tiao (Chinese fried long doughnuts) add a contrasting crispy texture. This dish is usually enjoyed as breakfast or a comforting meal for recovery.
Ingredients
- 1 C jasmine rice rinsed and drained, uncooked, long-grain white
- 4 C chicken broth or sub with water or vegetable broth
- 2 C water or more if you prefer a thinner consistency
- 4 cloves garlic minced
- ½" piece ginger sliced into coins
- 1 chicken breast fresh or frozen
- ½ teaspoon salt or to your taste, sea salt
- ¼ teaspoon white pepper
Garnish:
- sesame oil
- green onions chopped
- ginger thinly sliced
- yu tiao Chinese long donut
- Fried shallot
- Chili oil
Instructions
- Place all the ingredients into the Instant Pot.
- Set to PORRIDGE or MANUAL, 25 minutes at HIGH PRESSURE.
- Let the vent naturally release.
- Remove chicken breast and shred with a fork or dice with a knife before returning to the pot.
- Give everything a stir and adjust seasoning to taste.
- If the congee is too thick, add a splash of hot boiled water to thin it out.
- If the congee is too thin, press the SAUTE button and cook for 1-2 minutes, until thickened to your preference.
- Ladle into bowls and garnish with a drizzle of sesame oil, green onions, ginger, fried shallot, and Chinese long donut.
