Irish Colcannon

Irish Colcannon is a traditional dish of mashed potatoes mixed with sautéed kale or cabbage, scallions, butter, and milk. It results in a creamy, hearty side with tender greens and a buttery finish. The combination offers a comforting texture and mild seasoning suitable for many meals.

Description

The Irish Colcannon recipe begins with boiling peeled and cubed potatoes until tender. While the potatoes cook, kale or cabbage is sautéed in butter until soft. Separately, milk, leftover butter, and chopped scallions are gently heated without boiling. Once the potatoes are drained, they are mashed with the warm milk mixture and seasoned with salt and pepper. The cooked greens are folded in last to distribute tender vegetable bits throughout the creamy mash.

This method creates a smooth, buttery mash with soft greens adding slight texture and flavor contrast. The scallions contribute a mild onion aroma without overpowering. The use of kale adds earthiness, while cabbage offers a sweeter note depending on choice.

Traditionally served warm, the colcannon is enhanced by a knob of butter melted in a well on top just before serving, lending extra richness and visual appeal. It pairs well as a side dish with roasted or braised meats and complements hearty meals.

Ingredients

  • 2  lbs potato 900g; peeled and cubed
  • 2 tablespoons butter divided, plus extra to serve
  • 2 cups kale or cabbage; chopped; 60g
  • ½ cup milk 125ml
  • 2 scallions chopped, or spring onion
  • ¼ teaspoons salt
  • ¼ teaspoons black pepper

Instructions

  1. Boil the potatoes in a pot with enough water to cover, for 15 minutes or until tender.
  2. Meanwhile, heat 1 tablespoon of the butter in a large frying pan and add the kale or cabbage. Sautee for 5 minutes, stirring, until soft.
  3. Add the remaining butter, milk and scallions/spring onions to a small pot and heat, but don’t boil.
  4. Drain the cooked potatoes, then mash with the scallion milk and season with salt and pepper.
  5. Stir in the cooked kale.
  6. Serve the colcannon warm, ideally with an extra knob of butter melting into a well in the top
