Perfect for a low calories meal, this chicken salad is easy to make.

Ingredients
- 3 chicken breast shredded, boneless, skinless, roasted
- 1/2 /2 cup Italian parsley fresh
- 1/4 /4 cup green olives chopped, Italian
- 1/4 /4 cup almonds roasted, slivered
- 1/2 /2 cup sun-dried tomatoes chopped, in olive oil
- 1/4 /4 cup eggplant chopped, pickled
- 1 tomato diced, large, fresh
- romaine lettuce hearts
FOR THE VINAIGRETTE
- 3 tbsp lemon juice fresh
- 1/4 /4 cup sherry vinegar
- 1 tbsp Dijon mustard
- 1 shallot minced, small
- salt to taste
- black pepper to taste
- 1/2 /2 cup extra-virgin olive oil
Instructions
- In a large bowl, combine the shredded chicken, parsley, almonds, sun-dried tomatoes, olives, diced tomato, and pickled eggplant. Season with salt and pepper to taste and set aside.
- Prepare the vinaigrette by combining the lemon juice, sherry vinegar, Dijon mustard, minced shallot, and olive oil in a blender or small food processor. Blend until emulsified, then add salt and pepper to taste.
- Pour the vinaigrette over the salad ingredients and toss to combine.
- Refrigerate for 2 hours before serving.
- Place some romaine hearts on a plate and mound the chicken salad on top to serve.
