Italian Chopped Salad

This loaded Italian chopped salad is made with crunchy veggies, salami, mini mozzarella balls, chickpeas, olives, and a zesty red wine vinaigrette.

Chopped Salad

  • 4 cups romaine lettuce chopped
  • 2 cups radicchio chopped
  • 1 cup chickpeas drained and rinsed
  • 1 cup cherry tomato halved
  • 1/2 cup cucumber English, diced
  • 1/2 cup yellow bell pepper diced
  • 1/4 cup red onion diced
  • 1/3 cup black olive sliced
  • 1/3 cup Pepperoncini drained, sliced
  • 4 ounces salami chopped
  • 1/2 cup mozzarella cheese mini balls
  • 1/3 cup Parmesan Cheese shaved
  • 2 tablespoons basil fresh, sliced into thin ribbons

Red Wine Vinaigrette

  • 2 tablespoons olive oil
  • 3 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon oregano dried
  • 1/4 teaspoon garlic powder
  • salt freshly ground, to taste
  • black pepper freshly ground, to taste

Instructions

  1. Combine the romaine lettuce and radicchio in a salad bowl or on a serving platter. Add the remaining salad ingredients and toss everything together.
  2. In a jar with a lid or a measuring glass, add all of the ingredients for the vinaigrette. Shake or whisk until well combined.
  3. Pour the vinaigrette onto the salad and toss everything together until it's coated. Serve immediately.

Notes

  • If you aren't serving the salad immediately, wait to add the vinaigrette until you are ready to serve it.
