Italian Chopped Salad

Italian Chopped Salad is a fresh mix of chopped romaine lettuce, provolone cheese, thinly sliced salami, red onion, cherry tomatoes, pepperoncini, and fresh parsley, tossed in a tangy homemade Italian dressing. Description

This salad features thin ribbons of romaine lettuce topped with alternating rounds of provolone and hard salami slices, adding creamy and savory notes. Red onion slices, diced cherry tomatoes, and mild pepperoncini bring brightness and slight heat, balanced by chopped fresh parsley.

The dressing is a simple vinaigrette of extra virgin olive oil, red wine vinegar, oregano, salt, pepper, and garlic powder, whisked together to complement and enhance the ingredients without overpowering them. Tossing the salad with the dressing just before serving ensures freshness.

Italian Chopped Salad Ingredients

  • 1 romaine lettuce head
  • 4 lices provolone cheese
  • 6 lices hard salami thinly sliced
  • 1/4 red onion large
  • 6 oz cherry tomato
  • 3 oz Pepperoncini mild
  • 2 tbsp parsley chopped, fresh

Italian Salad Dressing Ingredients

  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp oregano dried
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. Rinse vegetables. Chop romaine lettuce into thin ribbons. Stack alternating provolone and salami on top of one another in 2 stacks. Roll them into tubes and slice into rounds.
  2. Slice red onion into thin slices. Cut cherry tomatoes into cubes and slice pepperoncini into thin slices - deseed if you want. 
  3. Whisk together salad dressing ingredients until thoroughly combined. Place all ingredients on the romaine lettuce along with the fresh parsley and toss to cobine.
  4. Pour Italian salad dressing over the chopped salad and toss again. Serve immediately.
