Orecchiette with Sausage and Broccoli

Orecchiette with Sausage and Broccoli combines pasta with browned Italian sausage and tender broccoli florets. The dish is flavored with garlic, red pepper flakes, and Parmesan cheese, creating a balanced savory and slightly spicy meal. Using pasta water to form a light sauce helps coat the pasta evenly and keeps the dish moist without being heavy. This makes an approachable dish for those who enjoy a hearty, meat-forward pasta with some green vegetable texture.

Description

Orecchiette with Sausage and Broccoli features the firm, cup-shaped pasta typical of orecchiette, paired with crumbled sweet Italian sausage. The sausage is browned in olive oil, releasing rich flavor, before tender broccoli florets and aromatic garlic are cooked alongside. Seasoned simply with salt, pepper, and red pepper flakes, the ingredients come together to create a subtle heat and depth. Adding pasta water and Parmesan cheese finishes the dish by creating a light, silky sauce that clings to the pasta and integrates the flavors.

The dish yields a combination of savory sausage, slightly crisp yet softened broccoli, and the nutty cheese topping the tender pasta. Cooking the pasta just shy of full tenderness ensures it absorbs the flavors in the sauce during final mixing. This makes the meal filling and balanced, ideal as a solo main or with a simple salad.
