Italian Dressing
Description
The dressing is made by whisking together olive oil, white wine vinegar, lemon juice, finely chopped fresh parsley, honey, dried oregano and thyme, freshly grated garlic, Dijon mustard, sea salt, and freshly ground black pepper. Stirring in Parmesan cheese adds a savory depth and creamy texture, though it is optional and can be omitted for a vegan version. The honey balances the acidity, while the fresh herbs and garlic provide brightness and aroma.
This versatile Italian dressing pairs well with green salads, grilled vegetables, or as a flavorful marinade. It offers a balance of acidity from the vinegar and lemon juice, herbaceous notes from parsley, oregano, and thyme, and richness from the olive oil and optional cheese.
The notes suggest a vegan variation by substituting maple syrup for honey and leaving out the cheese, adapting the dressing to plant-based diets.
