Italian Hot Chocolate
Description
This Italian Hot Chocolate recipe begins by blending unsweetened cocoa powder with a few tablespoons of milk into a paste, which prevents clumping. More milk is added with continuous whisking while the mixture gently warms. Small pieces of dark or bittersweet chocolate are stirred in to melt thoroughly, adding richness.
Sugar is added to taste, balancing bitterness with sweetness. Corn starch is whisked in just before the mixture reaches a boil, thickening the drink to a creamy consistency similar to a dessert. The hot chocolate is then brought to a brief boil with constant whisking to avoid lumps, then removed from heat and served hot.
This beverage offers a dense, indulgent texture uncommon in standard hot cocoa, ideal for sipping on cool days or as a dessert treat.
Adjust sugar and corn starch amounts to customize sweetness and thickness.
Ingredients
- 2 Tbsp cocoa powder good quality, unsweetened
- 6 oz milk whole
- 1 oz dark chocolate (or bittersweet- broken into small pieces)
- 1 ½ tsp sugar (more or less, to taste)
- 1 tsp corn starch
Instructions
- Put the cocoa into a small pot (off the cooktop) and add about a tablespoon or two of the milk to whisk into a paste, then add the remaining milk and continue whisking. I use this mini-whisk from OXO as it's perfect for jobs like this.
- Place the pot over medium heat and continue to whisk; add the broken chocolate. Keep whisking until the chocolate has melted.
- Next, add the sugar and stir.
- Continue to whisk the mixture while adding the corn starch, before the hot chocolate comes to a boil.
- Turn up the heat and whisk briskly to keep the mixture smooth. As soon as it comes to a boil, remove from the heat and pour into a mug. Serve immediately.
Notes
- Adjust sugar to personal preference for desired sweetness.
- Control the amount of corn starch to vary thickness from lighter to very thick hot chocolate.
