White rice mixed with tuna, fresh tomatoes, Swiss cheese, olives, and eggs, make this Italian Rice Salad a great lunch or a light dinner!

Ingredients
- 4 cups cooked long-grain rice
- 3 cups diced fresh tomatoes
- 2 cups chopped black olives
- 2 cups diced Swiss cheese (or your favorite kind)
- 4 hard boiled eggs, chopped
- 1 can (6.5 oz) tuna
- 4 tbsp. extra virgin olive oil
- 2 tbsp. chopped dill
- salt and pepper to taste
Add to Shopping List
Instructions
- Place all of the the ingredients into a large bowl and mix well. (Note: use the oil from the tuna can as well).
- Garnish your salad with more dill if desired.
