This Italian Sub Pasta Salad has everything in an Italian sub in a salad with pasta. This is a super hearty salad that can be a main meal.

Ingredients
DRESSING:
- 1/4 /4 cup olive oil
- 1/4 /4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- 1/4 /4 teaspoon salt kosher salt, to taste
- 1/4 /4 teaspoon black pepper kosher salt, to taste
SALAD:
- 2 cups spiral pasta uncooked
- 1 cup bell pepper any color, diced
- 3/4 /4 cup Pepperoncini sliced
- 1/2 /2 onion red, sliced
- 4 ounces provolone cheese cubed
- 2 ounces ham thinly sliced, deli-style
- 2 ounces hard salami thinly sliced
- 5 cups lettuce chopped
- 3/4 /4 cup cherry tomato quartered
Instructions
- In a small bowl, whisk together the dressing ingredients.
- Cook pasta in salted water according to package directions. Drain and cool.
- In a large bowl, combine bell pepper, pepperoncini, red onion, cheese, meats, and pasta. Right before serving add lettuce and tomatoes. Drizzle with dressing and toss to coat. Add more salt and pepper if needed and serve.
