  • 3/4 cup (180g) red wine vinegar
  • 1/2 cup (45g) Pecorino Romano cheese grated
  • 1 teaspoon oregano dried
  • 1/4 teaspoon crushed red pepper flakes hot
  • 5 cloves garlic
  • 1/4 cup flat-leaf parsley Italian
  • salt to taste
  • black pepper to taste
  • 1 1/2 teaspoons Dijon mustard
  • 1 cup (240g) extra virgin olive oil

Instructions

  1. Add all of the ingredients except the extra virgin olive oil to a blender or food processor and pulse to combine.
  2. Add the extra virgin olive oil and blend until smooth and emulsified. Taste the vinaigrette and season with salt and pepper to taste. Enjoy!

Notes

  • This recipe yields about 2 cups of dressing, roughly 16 servings of 2 tablespoons each.
  • The vinaigrette can be made by blender, hand whisking, or shaking in a sealed jar for convenience.
