Ingredients

  • ½ teaspoon fennel seeds
  • ½ teaspoon cumin seeds
  • ½ teaspoon black peppercorns
  • ½ teaspoon whole cloves
  • ½ teaspoon fenugreek seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon Turmeric
  • ¾ teaspoon dried ground ginger
  • ½ teaspoon cinnamon
  • ½ teaspoon ichimi togarashi or half as much cayenne pepper
  • ¼ teaspoon ground cardamom

Instructions

  1. Toast the fennel seeds, cumin seeds, black peppercorns, cloves, fenugreek seeds, and coriander in a dry pan over medium heat, stirring frequently for 3 minutes until fragrant.
  2. Turn off the heat and add the remaining powdered spices to the pan. Let sit for a few minutes to toast gently as the pan cools.
  3. Transfer the mixture to a spice grinder or high-speed blender and grind to a fine powder.
  4. Store in an airtight container.
