John Wayne Casserole

This delicious John Wayne Casserole is Mexican comfort food at its finest! Layers of seasoned ground beef, creamy cheddar cheese mixture and more shredded cheese are baked on top of a biscuit crust for a crowd-pleasing family dinner!

Ingredients

  • 1 can grands biscuits
  • 2 pounds lean ground beef
  • 1 cup onion, diced
  • ½ cup bell pepper, diced
  • 1 packet taco seasoning
  • 1 (4-ounce) can diced green chiles, drained
  • 1 (10-ounce) can Rotel diced tomatoes and green chiles, drained
  • ¾ cup sour cream
  • ¾ cup mayonnaise
  • 2 ½ cups cheddar cheese, shredded and divided

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9x13 baking dish with pan spray.
  2. Brown 2 pounds lean ground beef in a large skillet over medium-high heat until no pink remains. Drain off the fat before adding 1 cup onion, and ½ cup bell pepper,. Cook for 3-4 minutes or until the onion is translucent.
  3. Add 1 packet taco seasoning, 1 (4-ounce) can diced green chiles, and 1 (10-ounce) can Rotel diced tomatoes and green chiles,and cook for 2-3 minutes until heated through and thickened slightly.
  4. In a small bowl mix together ¾ cup sour cream, ¾ cup mayonnaise, and ½ cup of the 2 ½ cups cheddar cheese,.
  5. Remove the biscuits from 1 can Grands biscuits and press them into the bottom of the pan, stretching and pinching as needed for them to completely cover the bottom. Bake the biscuits for 12 minutes.
  6. After 12 minutes of baking, top the biscuits with the beef mixture and then spread the creamy mixture as evenly as you can over the top. Top with the remaining 2 cups of cheese.
  7. Bake for 30-35 minutes, until the cheese is fully melted and browning. Serve immediately.
