Kalua Pork / Pulled Pork Sandwiches

Kalua Pork for pulled pork sandwiches is a slow-cooked Hawaiian-style roast made by seasoning a pork shoulder with salt and liquid smoke, wrapped in ti leaves or cooked directly in a crock pot. The pork cooks low and slow until very tender, shredding easily and capturing smoky, salty flavors. It's served in hamburger buns with coleslaw and barbecue sauce.

Description

This recipe centers on making Kalua Pork, a slow-cooked, smoky pulled pork traditionally prepared with ti leaves for aroma and moisture. A 3 to 4-pound pork roast is generously salted and coated with liquid smoke, then wrapped in washed ti leaves or placed directly into the crock pot. Water is added to the bottom for moisture, and the pork cooks covered on low for 8 to 10 hours, developing a tender texture that can be easily shredded.

The slow cooking method breaks down connective tissue, resulting in juicy, flavorful pork with subtle smokiness from the liquid smoke and a mild herbal note if ti leaves are used. The shredded pork is served in hamburger buns or rolls, layered with coleslaw and a drizzle of barbecue sauce to add fresh crunch and tangy, sweet flavor contrast.

This dish is well suited as a casual, hearty meal for gatherings and barbecues. The make-ahead nature of slow cooking allows convenient preparation, with the pork holding moisture in its juices until served.

Servings

For the Kalua Pork

  • 3-4 pound pork roast
  • 1-2 Tbsp kosher salt
  • 1/3 c. liquid smoke
  • 1 c. water
  • 4 ti leaf Washed (If ti leaves aren't available it's no worries. It is still great without them, they just add a Hawaiian element to the dish.)

For the Sandwich

  • 10 Hamburger Bun or rolls
  • 2 cups coleslaw homemade
  • 1 cup barbecue sauce homemade

Instructions

  1. Line bottom of crock pot with 2 ti leaves (if you have them). Rub pork generously with salt, pour on liquid smoke.
  2. Place on ti leaves or in the crock pot. Add water. Fit remaining ti leaves (again, if you have them) around outer edge of crockpot.
  3. Cover and cook on low for 8-10 hours or until it will easily shred into juices (do not drain).
  4. Serve on shredded pork on hamburger buns or rolls with coleslaw. Drizzle with BBQ sauce.
