Ingredients
- 2 large eggs
- 1 medium avocado
- 4 tablespoon butter melted
- 4 tablespoon almond butter
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup erythritol/stevia blend
- ⅓ cup cacao powder
- 1 teaspoon vanilla extract
Instructions
- Pre-heat oven to 350F. Prepare ingredients as needed.
- Line a loaf pan with parchment paper and set aside.
- In a food processor, combine all of the ingredients.
- Pulse together until smooth, for about 30-45 seconds in total. Try not to overmix as the final product will become cakey if you do.
- Transfer the batter to the loaf pan and bake for 25 minutes or until the edges begin to separate from the side.
- Remove from the oven and let cool for 10-15 minutes. Slice into squares and store leftovers in an airtight container in the fridge for up to a week.
