Keto Cinnamon Candied Nuts

These delicious sugar-free cinnamon candied nuts can be made with any of your favorite nuts, or even peanuts! They are the perfect crunchy and sweet keto snack, and make a lovely homemade gift!

Ingredients

  • 1 1 large egg white
  • ⅓ cup powdered sweetener 
  • 1 1 tablespoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 1 teaspoon vanilla extract
  • ¼ ¼ teaspoon blackstrap molasses (optional)
  • 1 1 scoop unflavored whey protein powder or vanilla flavored protein (optional)
  • 1 1 tablespoon water only if adding protein powder
  • 2 2 cups your favorite nuts, any one type or mixed almonds, pecans, walnuts, hazelnuts, peanuts

Instructions

  1. Preheat oven to 150 °C (300 °F).
  2. Beat 1 large egg white to stiff peaks
  3. Add 1/3 cup powdered sweetener, 1 tablespoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1 teaspoon vanilla extract and (optional) 1/4 teaspoon blackstrap molasses. If you wish a higher protein snack also add 1 scoop unflavored whey protein powder and 1 tablespoon water. Mix until fully combined.
  4. Add the 2 cups your favorite nuts, any one type or mixed and mix them in, coating them all really well.
  5. Pour the coated nuts onto a baking tray covered in parchment or wax paper. Spread them uniformly .
  6. Take the tray with the keto candied nuts into the preheated oven, for one hour. Every 15 minutes, take the tray out of the oven and mix the nuts around with a spatula or wooden spoon, carefully not to rip the paper.
  7. Take them out of the oven and wait for them to cool down before storing them, in airtight plastic bags or containers.
