Keto Cinnamon Rolls are low-carb pastries made with melted mozzarella and cream cheese-based dough, combined with almond flour and baking powder. Filled with a cinnamon-sweetener paste and topped with a cream cheese and Greek yogurt frosting sweetened with vanilla stevia, these rolls offer a tender, rich texture suitable for ketogenic diets.

Description

The dough is formed by melting mozzarella and cream cheese, then mixing in an egg, almond flour, and baking powder to create a smooth, pliable ball. After dividing and rolling out the dough, a cinnamon and sweetener paste is spread before rolling into buns and cutting to form the rolls.

Baked at 180°C (360°F), the rolls turn golden brown with a slightly chewy texture from cheese and a sweet-spiced filling. The frosting combines cream cheese, Greek yogurt, and vanilla-flavored stevia for a creamy, lightly sweet topping.

These rolls are small but filling, suitable for a low-carb diet. They can be baked in muffin tins or on baking sheets. The recipe uses pre-shredded mozzarella, which performs better than fresh for dough consistency.

The dough can be tricky due to stickiness; lightly oiling hands or warming the dough helps handling. Almond flour substitutes and frosting variations are possible depending on ingredient availability and taste.

Ingredients

  • 175 g mozzarella cheese 1 ½ cups, shredded
  • 80 g almond flour ¾ cup, extra fine
  • 2 tablespoon cream cheese
  • 1 egg room temperature
  • ½ teaspoon baking powder

For the filling:

  • 2 teaspoon water
  • 2 tablespoon granulated sweetener
  • 2 teaspoon cinnamon

For the frosting:

  • 2 tablespoon cream cheese
  • 1 tablespoon Greek yoghurt full fat
  • 2 drops stevia vanilla flavor

Instructions

  1. Pre-heat oven to 180 Celsius/360 Fahrenheit.
  2. Melt the mozzarella and cream cheese in a non-stick pot over a low heat or in a microwave (1 ½ minutes, stirring half way through). Take off the stove and/or make sure the cheese is melted, but not bubbling.
  3. Stir in the egg.
  4. Now add the almond flour and baking powder. Start to combine using a fork, then use your hands to make a ball of smooth dough. This can be easier if you lightly oil your hands first.
  5. Divide the dough into 6 balls of 50g each.
  6. Form long rolls (40cm), then flatten out with your hands. Make the dough as thin as you can.
  7. Prepare your cinnamon filling: boil water, then stir in the sweetener and cinnamon. Spread the cinnamon paste over the flattened dough rolls.
  8. Roll each into a bun and cut sideways in half. Now you have 12 buns which you place on a non-stick baking sheet or in a pie dish.
  9. Bake for 20 minutes or until golden brown.
  10. While the rolls are in the oven, prepare the frosting: Mix cream cheese, yoghurt and stevia. Spread over the warm rolls and serve.

Notes

  • Each roll has approximately 3g net carbs; the recipe yields 12 rolls.
  • Use pre-shredded mozzarella for better dough consistency, as fresh mozzarella is too moist.
  • If the dough is sticky, oil hands or warm the dough to improve handling.
  • Dissolve sweetener in water for the filling, or substitute butter for a buttery flavor.
  • Vanilla extract can replace vanilla-flavored stevia in the frosting if needed.
  • If using almond meal or ground almonds instead of extra-fine almond flour, add extra flour or coconut flour to balance texture.
  • For frosting alternative, mix powdered sweetener with water to pipe or drizzle over cooled rolls.
