Keto Flaxseed Bread with Coconut Flour

Keto Flaxseed Bread with Coconut Flour blends ground flaxseed and coconut flour with eggs, olive oil, and baking powder to produce a low-carb bread with a dense yet moist crumb. The recipe yields a bread suitable for slicing into generous portions, with a nutty flavor from flaxseed and a light texture helped by whipped egg whites. It can be baked in loaf or focaccia style depending on the pan used.

Description

This bread starts by foaming whole eggs and egg whites to incorporate air for lightness. Coconut flour and ground flaxseed absorb moisture, giving the bread a firm structure while remaining tender. Olive oil adds richness, and baking powder helps with lift. The batter rests before baking to allow the flours to hydrate fully.

Baked at 180°C (356°F) until a knife inserted comes out clean, the bread forms a golden crust with a soft center. It can be baked as a loaf or in square pieces resembling focaccia, making it versatile for different presentations. Nutritional info estimates about 2g net carbs per generous portion of eight slices.

Portion size affects the carb count; the recipe yields around 20 slices when baked in a larger pan. Using silicone loaf molds can prevent sticking and ease removal. The bread freezes well, maintaining quality for later use. Baking time reduces when making muffins from the same mix.

Ingredients

Servings
  • ¾ cup / 80 g coconut flour
  • ½ cup / 60 g ground flaxseed or flax meal
  • 3 egg large, room temperature
  • 3 egg large, white
  • 5 tablespoon olive oil
  • 2 teaspoon baking powder
  • 4.7 oz / 140 ml / water (10 tbsp)
  • pinch salt sea salt

Instructions

  1. Preheat the oven to 180 Celsius / 356 Fahrenheit.
  2. Whisk the eggs and egg whites with an electric mixer or in a food processor until foamy.
  3. Add the rest of the ingredients and blend until you have a smooth dough.
  4. Let the dough sit for a few minutes so the coconut flour and flax can absorb the moisture.
  5. Pour the mix into a well-oiled pan (alternatively, line a pan with baking paper) and bake at 180 Celsius / 356 Fahrenheit for 35 minutes or until browned on top. It's ready when a knife inserted comes out clean.
  6. If you prefer to bake as a loaf, increase the time in the oven by 10 minutes.

Notes

  • Nutrition calculated for 8 generous servings with about 2g net carbs each.
  • Using a silicone loaf mold prevents sticking and simplifies removal after baking.
  • Freezing this bread works well to preserve freshness; muffin baking time is shorter.
  • When baked focaccia-style, lining the pan with baking paper helps with removal.
