Ingredients

  • 10 pound bone-in fully cooked half ham
  • ½ cup sugar-free honey substitute
  • ¼ cup sugar-free apricot jam
  • ¼ cup brown allulose/monk fruit
  • ¼ cup butter
  • ½ cup water
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon ground cinnamon
  • Pinch of nutmeg
  • Pinch of ground cloves

Instructions

  1. Preheat oven to 325°F, while you prepare the ham.
  2. Remove the skin (if any) then, using a sharp knife cut about ¼ inch deep and score the fat in a diamond-shaped pattern.
  3. Place the ham, face down, in a 9x13 baking pan with a baking rack. Cover tightly with aluminum foil and bake for 1 ½ hours.
  4. Remove the ham from the oven and increase the temperature to 400°F.
  5. Add all the remaining ingredients to a saucepan and bring to a gentile simmer, stirring the entire time. Simmer for 5 minutes until the brown sweetener has dissolved and the mixture has thickened.
  6. Brush ⅓ of the glaze all over the ham and continue to bake, uncovered, for 15 minutes.
  7. Repeat the process once more until the outside has caramelized. Take the remaining ⅓ of the glaze and whisk in some of the ham juices to make a sauce to pour over the sliced ham before serving.
