Ingredients

  • 2 cups almond flour
  • 1/4 cup granulated sweetener (I used xylitol)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup pumpkin puree
  • 3 eggs
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 325°F. Line a loaf tin with parchment paper.
  2. Mix all the ingredients together (including the chocolate chips if you are using them) in a large bowl until smooth.
  3. Pour the batter into the loaf tin and bake for 1 hour. (Insert a sharp knife into the center of the cake. If it comes out clean, the loaf is done.)
  4. Let the loaf rest for 20 minutes before removing it from the tin. Then let the loaf cool on a rack before serving.
