Description

The protein waffles are prepared by blending eggs, Greek yogurt, vanilla-flavored whey protein powder, almond flour, and butter until smooth.   • 2 egg large
  • ¼ cup Greek yogurt or sour cream
  • 1 ½ coop whey protein or unflavored, see Notes, vanilla flavor
  • ½ cup almond flour
  • 3 tablespoons butter or ghee, softened (plus more for the iron)
  • cup mozzarella cheese shredded
  • ½ teaspoon baking powder

For the keto quick "maple" sugar-free syrup

  • 1 cup water
  • ½ cup allulose sweetener
  • 1 cinnamon stick
  • 10 cloves
  • 2 lices ginger root fresh
  • 1/16 /16 teaspoon ground nutmeg
  • ¼ teaspoon blackstrap molasses
  • 2 teaspoons vanilla extract
  • ⅛ to ¼ to ¼ teaspoon xanthan gum

Instructions

Protein Waffles

  1. Preheat waffle iron to 205 °C (400 °F) or according to the manufacturer's instructions.
  2. Add in the blender jar 2 large eggs, 1/4 cup Greek yogurt, 1 1/2 scoop vanilla whey protein, 1/2 cup almond flour, and 3 tablespoons butter. Blend until smooth. Scrape the sides of the blender (or bowl, if using immersion blender) to make sure all powders are mixed.
  3. Add 1/3 cup shredded mozzarella and 1/2 teaspoon baking powder, and blend until thoroughly incorporated (no visible cheese pieces left).
  4. Brush the preheated waffle iron with butter or ghee, and pour the waffle batter in the center of the plate. This recipe makes 4 large waffles, so adjust the batter quantity according to your waffle machine size.
  5. Cook the waffles for 5 minutes at 205 °C (400 °F), or until golden.

Keto Maple Syrup

  1. Add to a saucepan 1 cup water, 1/2 cup allulose sweetener, 1 cinnamon stick, 10 cloves, 2 slices fresh ginger root, 1/16 teaspoon ground nutmeg and 1/4 teaspoon blackstrap molasses (if using). Bring it to a boil then slow down to a simmer, and let it simmer for 5 minutes.
  2. Remove from the heat, add 2 teaspoons vanilla extract and evenly sprinkle 1/8 to 1/4 teaspoon xanthan gum on top, whisk briskly until fully dissolved to avoid clumps. Add 1/4 teaspoon if having the syrup warm, or 1/8 teaspoon if having the syrup cold.

  • Developed for vanilla flavored whey protein; if using unflavored powder, add about 1 tablespoon vanilla extract and adjust sweetener as needed.
  • When using erythritol instead of allulose, use approximately 30 to 40 grams (3 to 4 tablespoons) for similar sweetness.
