Kodiak Birthday Cake Protein Donuts
Description
Kodiak Birthday Cake Protein Donuts combine a boxed birthday cake mix with vanilla protein powder, almond milk, egg whites, and melted coconut oil to create a batter baked in donut molds. The donuts have a firm yet tender crumb from the combination of cake mix and protein powder. Once baked and cooled, they are spread with vanilla frosting and decorated with rainbow sprinkles, adding a classic birthday cake appearance. The frosting adds a creamy, sweet contrast to the cake-like donut base. These donuts are best chilled before serving to help the frosting set and improve texture.
The batter includes both vanilla and almond extracts, contributing subtle flavor layers alongside the birthday cake mix. Baking time is short, about 10 minutes, ensuring the donuts remain moist. Cooling completely before frosting prevents melting and preserves the topping's appearance.
You can adapt the recipe to be gluten-free or vegan by using appropriate baking mixes and frostings. The provided notes also suggest homemade frosting options if you prefer less sweetness or to control ingredients.
Storing the finished donuts in an airtight container in the refrigerator extends freshness up to 5-6 days. The whipped vanilla frosting is key to mimicking a traditional donut experience.
Ingredients
- 1 cup birthday cake baking mix I used Kodiak. Can use any box cake mix, 160g
- 1/4 cup Cake Pop Protein Powder I used PEScience, or vanilla protein powder; 30g
- 3/4 cup almond milk or milk of choice, unsweetened, 180g
- 3 Tbsp egg white, 45g
- 1 Tbsp coconut oil melted, 15g
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract or 1/2 tsp cake batter extract
- 9 Tbsp vanilla frosting see notes - I used Betty Crocker, whipped
- 2 Tbsp Rainbow sprinkles
Instructions
- Preheat the oven to 350 degrees F. Spray 9-donut cavities with cooking spray.
- Mix together the kodiak mix and protein powder in a bowl.
- Then whisk in the milk, egg whites, melted coconut oil, vanilla and almond extract.
- Pour into the donut pans.
- Bake for 10 minutes, or until a toothpick inserted comes out clean. Let sit in the pan for 1-2 minutes then transfer to a wire rack to finish cooling. Let cool completely before adding frosting (so it doesn't melt off!)
- Once cooled, spread 1 tablespoon of frosting onto each donut then sprinkle the donuts with sprinkles. Let donuts chill until ready to enjoy (they’re better the longer they’re in the fridge!)
Notes
- Use a gluten-free baking mix if gluten sensitivity is a concern.
- For vegan or dairy-free versions, choose vegan baking mixes and frostings with no animal-derived ingredients.
- Chill the frosted donuts in the fridge to help the frosting set and improve texture.
- Store finished donuts in an airtight container in the refrigerator for up to 5-6 days to maintain freshness.
- You can substitute the store-bought frosting with homemade glazes or cream cheese frostings using provided ingredient mixes.
