Korean Style Pork Chops

Korean Style Pork Chops offer a flavorful fusion of soy sauce, honey, garlic, ginger, sesame oil, and spicy gochujang. The marinade imparts a bold, slightly sweet, and spicy profile while the cooking method combines skillet searing for a caramelized exterior with oven roasting to ensure even doneness. The pork chops develop a tender texture with a rich glaze, accented by black pepper seasoning. This recipe calls for boneless chops about an inch thick and benefits from a marinade time of at least 20 minutes to deepen the flavors.

Description

The Korean Style Pork Chops recipe brings together a balanced marinade of low sodium soy sauce, honey, garlic, ginger, sesame oil, and gochujang or sriracha. The pork chops are first marinated, allowing the flavors to penetrate the meat. A hot skillet sears the chops briefly to create a brown crust, then the remaining marinade is added before transferring the skillet to a preheated oven to finish cooking. This results in chops with a caramelized, slightly sticky exterior and juicy interior. Black pepper is added at the end to enhance the savory components.

Serving these chops as a main dish can be complemented with steamed rice or simple vegetables to balance the intense flavors. The marinade’s honey adds a touch of sweetness that offsets the chili paste’s heat, making the dish well-rounded and appealing for those who enjoy Korean-inspired cooking.

For best results, use pork chops approximately one inch thick; thinner chops may cook fully on the stovetop without needing the oven. Marinate the chops for at least 20 minutes, or longer for deeper flavor development. Using a meat thermometer to confirm an internal temperature of 145°F (63°C) ensures the pork is safely cooked while retaining moisture.

Ingredients

Servings
  • ¼ cup soy sauce low sodium
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1 teaspoon sesame oil
  • 2 teaspoons gochujang (red chili paste) or sriracha
  • 4 pork chops boneless
  • 1 tablespoon olive oil
  • black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. In a medium size bowl whisk together the soy sauce, honey, garlic, ginger, sesame oil and gochujang. Pour over pork chops and let marinade for about 20 minutes.
  3. Heat the olive oil in a large skillet for medium high heat. Add pork chops, without marinade, and cook for about 2 to 3 minutes for the first side, or until it gets a nice brownish color. Flip the pork chops and pour the remaining marinade over them. Cook another 2 to 3 min on this side.
  4. Place the skillet in the oven to finish cooking them. Roast for about 5 to 10 minutes, or until pork chops are completely cooked through.
  5. Season with some black pepper and serve.

Notes

  • Use pork chops about 1 inch thick for optimal texture; thinner pieces may not require oven finishing.
  • Marinate chops for at least 20 minutes and up to overnight for a more developed flavor.
  • Check doneness with a meat thermometer; pork should reach 145°F (63°C) to be safe and juicy.
