Lavender Vanilla Scones

Scones:

  • 2 cups all-purpose flour 250 grams
  • 1/4 cup granulated sugar 50 grams
  • 1 tablespoon baking powder 12 grams
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter chilled and diced, 85 grams
  • 1 tablespoon lavender dried, 2 grams
  • 1/2 cup heavy cream plus extra as needed and for brushing
  • 1 egg large
  • 1 teaspoon vanilla bean paste or vanilla extract

Vanilla Glaze:

  • 1 cup powdered sugar 120 grams
  • 1-2 tablespoons milk 15-30 milliliters
  • 1/2 teaspoon vanilla bean paste or vanilla extract
  • dried lavender for garnish

Instructions

  1. Preheat oven to 400˚F (200˚C). Line a baking sheet with parchment or lightly grease.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Quickly cut in the butter using a dough blender, two forks, or your fingers until blended and no pieces are larger than a pea.
  4. In a small bowl, whisk together the dried lavender, heavy cream, egg, and vanilla bean paste.
  5. Gently mix the cream mixture into the dry ingredients and knead just until the dough comes together. Add a little more cream a splash at a time only if the dough is too crumbly to hold together. It should not be sticky.
  6. On a lightly floured surface, gently knead the dough just enough to make it smooth. Do not overmix.
  7. Pat the dough into a rectangle about 1/2 inch (1.25 centimeters) thick.
  8. Cut the scones into 9 equal squares or into the desired size.
  9. Transfer to the prepared baking sheet at least 2 inches (5 centimeters) apart.
  10. Brush the tops of the scones with a thin layer of heavy cream and bake in preheated oven until lightly golden, 10-15 minutes.
  11. Gently transfer the scones to a wire rack and cool to room temperature.
  12. Place the powdered sugar in a small bowl.
  13. Whisk in the milk and vanilla bean paste until a smooth glaze forms.
  14. Drizzle the glaze over the cooled scones and immediately sprinkle with a small pinch of dried lavender, if desired.
  15. Allow the glaze to set before serving. These Lavender Vanilla Scones are best the day they are baked.
