Lazy Pierogi Recipe (Video)

This Lazy Pierogi Recipe simplifies the traditional dumpling by combining farmer's cheese, eggs, sugar, and melted butter into a sticky dough mixed with flour. The dough is rolled into strings, cut into pieces, and boiled until the dumplings float, indicating they are cooked. Tossed with melted butter and served with sour cream or jam, these pierogi offer a soft and slightly sweet comfort food.

Description

The recipe begins by mixing farmer's cheese, eggs, sugar, and melted butter to form a moist base. All-purpose flour is folded in gradually to create a sticky dough that can be handled with floured hands. The dough is rolled into thin strings and cut into inch-long pieces.

These pieces are boiled in batches in salted water, floating to the surface when cooked. After draining, the pierogi are immediately tossed with melted butter to add richness and prevent sticking. Pierogi are traditionally served with sour cream, jam, or fresh fruit, balancing savory and sweet options.

This preparation omits complicated fillings or dough shaping, providing a quick way to enjoy the characteristic soft texture and mild flavor typical of pierogi noodles enhanced by the slight sweetness of sugar.

Ingredients

Servings
  • 1 1/2 cup farmer's cheese
  • 2 egg
  • 1/2 cup sugar
  • 5 tbsp butter melted, salted
  • 2 cup all-purpose flour

For Serving

  • butter melted
  • jam
  • sour cream

Instructions

  1. In a large bowl, combine the eggs with farmer's cheese, sugar, and melted butter.
  2. Into the wet ingredients, fold in the all-purpose flour in small portions. Note: depending on the flour you use, you may need to add a bit more. The dough should be sticky, but possible to work with on a well-floured surface.
  3. Place the dough onto a well-floured surface. Roll out strings of dough and cut them into 1-inch pieces.
  4. Bring a pot of water to boil. In batches, boil the dumplings so they don't stick together, stirring them occasionally. You'll know they are ready when they float to the top of the water. Drain them and immediately toss them in melted butter.
  5. Serve with sour cream, jam, or your favorite fruit. Enjoy!
