                                Ingredients
- 8 tablespoons butter divided
 - 5 garlic cloves crushed
 - ¼ cup white wine
 - 20 medium shrimp peeled and deveined
 - 1 teaspoon kosher salt
 - ½ teaspoon black pepper
 - 1 tablespoon lemon juice
 - ½ teaspoon lemon zest
 - 1 teaspoon fresh chives chopped

Instructions
- Add 2 tablespoons butter to a small saucepan on the stove over medium heat.
 - Once melted, add the crushed garlic cloves. Cook for 1-2 minutes, then add the white wine.
 - Reduce for 5-6 minutes, then add 4 tablespoons butter, whisking all of the ingredients together.
 - Cook for 2-3 minutes, then turn the heat off, cover the saucepan and set it aside.
 - Add the remaining 2 tablespoons butter to a large skillet. Once the butter is melted, add the shrimp. Sprinkle with the salt and pepper.
 - Cook 3-4 minutes, flipping the shrimp half way through.
 - Add the lemon juice, then add the garlic butter sauce.
 - Cook for 1-2 minutes, remove from the heat and top with the lemon zest and chives.
 - Serve over cooked pasta or with your choice of side.

Notes
- If serving with pasta, be sure to boil the water before starting the shrimp scampi recipe.
 - For a low carb option, serve this dish with zucchini noodles or spaghetti squash.
 - White grape juice can be used as a substitute for white wine sauce. In a pinch, chicken broth can also be used instead of the white wine.
