These Lemon Coconut Cashew Energy Bites are easy to make, only use 4 ingredients, and they're paleo, vegan and gluten-free!

Ingredients
- 3/4 cup raw cashews
- 1/2 cup unsweetened coconut flakes
- 1/2 cup pitted Medjool Dates
- zest of a lemon
- pinch of kosher salt
- 1 tablespoon of water

Instructions
- Add the cashews, coconut, lemon zest, salt and dates to a food processor and blend until finely ground. Add in the water a tablespoon at a time until the mixture comes together in a ball.
- Use a 2 teaspoon cookie scoop to scoop out the dough. Roll into balls, wetting your hands slightly if the mixture starts to stick to you. Roll in extra coconut if desired.
- Store the energy bites in an airtight container in the refrigerator or freezer.
