Ingredients

Spice Fritters

  • ½ Cup almond flour
  • 3 Tbsp. erythritol
  • 1 tsp. baking powder
  • 1 large egg
  • ½ tsp. xanthan gum
  • ½ tsp. cinnamon
  • ½ tsp. vanilla
  • zest of 1/2 lemon
  • 2 Cups Fat of Your Choice For Frying

Lemon Glaze

  • juice of 1/4 lemon
  • 3 Tbsp. powdered erythritol

Instructions

  1. Mix all dry ingredients together.
  2. Add your egg and mix well until a sticky dough forms.
  3. Bring your oil to 375F on the stove. If you don't have a thermometer, you can drop a small piece of dough it to see when the oil it ready. If it's ready, the dough will begin to fry immediately.
  4. Drop your dough balls in 4 at a time.
  5. Brown on one side and flip to the other, about 4 minutes in total.
  6. Remove from pan, rest on paper towels, and continue to fry the rest.
  7. In a small remekin, combine lemon juice and erythritol until a smooth icing is formed.
  8. Dip the fritters in the icing and serve!
