Ingredients
Spice Fritters
- ½ Cup almond flour
- 3 Tbsp. erythritol
- 1 tsp. baking powder
- 1 large egg
- ½ tsp. xanthan gum
- ½ tsp. cinnamon
- ½ tsp. vanilla
- zest of 1/2 lemon
- 2 Cups Fat of Your Choice For Frying
Lemon Glaze
- juice of 1/4 lemon
- 3 Tbsp. powdered erythritol
Instructions
- Mix all dry ingredients together.
- Add your egg and mix well until a sticky dough forms.
- Bring your oil to 375F on the stove. If you don't have a thermometer, you can drop a small piece of dough it to see when the oil it ready. If it's ready, the dough will begin to fry immediately.
- Drop your dough balls in 4 at a time.
- Brown on one side and flip to the other, about 4 minutes in total.
- Remove from pan, rest on paper towels, and continue to fry the rest.
- In a small remekin, combine lemon juice and erythritol until a smooth icing is formed.
- Dip the fritters in the icing and serve!
