Liege Belgian Waffles

Liege Belgian Waffles are rich, dense waffles made from a yeast-leavened dough sweetened with pearl sugar and flavored with vanilla. The dough is sticky and requires resting to double in size, resulting in waffles with a caramelized exterior and tender inside. Cooking until golden brown produces the characteristic chewy and sweet texture.

Description

Liege Belgian Waffles use instant yeast and milk to activate fermentation, yielding a yeast dough rather than a batter. Flour, sugar, salt, eggs, melted butter, and vanilla extract create a sticky dough that must rest about an hour to rise and develop flavor. Cooking spoonfuls of dough on a medium-heat waffle iron until golden brown caramelizes the sugars, forming a sweet and slightly crisp crust with a chewy, soft interior.

The resulting waffles are flavorful and texturally distinct from lighter batter-based waffles. They work well for breakfast or dessert and can be enjoyed plain or with toppings like fruit or cream.

Ingredients

Servings
  • 1 tbsp instant yeast
  • 2/3 cup milk
  • 1 cup granulated sugar
  • 1 tsp salt
  • 5 cup flour
  • 6 egg
  • 2 cup butter melted
  • 2 tsp vanilla extract

Instructions

  1. Combine yeast, lukewarm milk and two table spoons of sugar into a bowl and let it sit for about 5 minutes, until bubbles appear.
  2. Combine the flour, reminder of sugar and salt in a separate bowl and make a well in the center. Pour the bubbly yeast mixture into the well and mix until combined. Into the mixture, add eggs, one at a time.
  3. Add melted butter and vanilla extract to the dough. The dough will turn out sticky. Let the dough sit for about an hour in a warm place or until it doubles in volume.
  4. Heat the waffle iron to a medium. Place a spoonful of the dough in the middle of a waffle iron and flatten it slightly.
  5. Cook waffles until they turn golden brown.
