Notes
- Potatoes: Use russet or Yukon Gold potatoes for the best texture.
- Chicken: Boneless, skinless chicken thighs can be used for extra juiciness.
- Extra Crispy Potatoes: Bake them for an extra 5 minutes before adding the chicken.
- Cheese: Feel free to swap in pepper jack or Colby cheese for a different flavor.
- Make It Spicier: Add cayenne pepper or hot sauce to the seasoning mix.
- Buffalo Ranch Chicken Casserole: Drizzle buffalo sauce over the casserole before serving.
- BBQ Chicken Casserole: Swap ranch seasoning for BBQ sauce for a smoky twist.
- Loaded Veggie Casserole: Add bell peppers, mushrooms, or broccoli for extra veggies.
- Low-Carb Version: Use cauliflower instead of potatoes.
- Creamy Ranch Chicken Casserole: Stir in ½ cup of sour cream before baking for an extra creamy texture.
