Low Carb Buffalo Chicken Meatballs
Report
Easier than buffalo wings, but just as tasty! These buffalo chicken meatballs make a great appetizer or snack, but they're also good as a main dish. We cut out the breadcrumbs for almond flour to keep these a bit healthier and low carb.

Ingredients
- 1 pound lean ground chicken
- 1 large egg
- 1/2 cup almond flour
- 1/4 cup hot sauce plus more for serving
- 1/4 cup shredded cheddar cheese
- 2 tablespoons Prepared ranch dressing plus more for serving
- 1 tablespoon dry Ranch seasoning

Instructions
- Preheat oven to 500 degrees. Spritz a baking sheet with nonstick spray.
- Add all of the ingredients to a medium bowl and mix well with your hands.
- Form mixture into 9 evenly sized meatballs and place on the prepared baking sheet.
- Bake for 15 minutes or until the internal temperature reaches 165 degrees.
- Serve with extra hot sauce and ranch dressing, as desired.
Notes
- The meatball mixture will be quite moist, but should roll into a ball nicely. If the mixture is too wet, add additional almond flour OR grated Parmesan cheese (to avoid adding additional carbs from the almond flour) one tablespoon at a time until the mixture is easy to handle.
- Ground turkey works just as well as a ground chicken and we can't tell a difference in flavor. We grab whatever is on sale.
- We use Frank's Red Hot Sauce, but Frank's Buffalo Sauce also works well. The buffalo sauce is less spicy than the straight hot sauce.
- Blue cheese dressing may be substituted for ranch.
