Low Carb Ground Turkey Lettuce Cups

These protein-packed lettuce cups are made with ground turkey simmered in a sweet and spicy sauce made with garlic, ginger, lime juice and YOWZERS red chili peppers. They're crunchy, tangy and naturally low carb.

Ingredients

Servings
  • 1 tablespoon avocado oil (or oil of choice)
  • 2 cloves garlic (minced)
  • 2 tablespoons ginger minced
  • 1 red chili pepper minced, YOWZERS brand
  • 1 cup carrot shredded
  • 20 ounces ground turkey or ground chicken, breast
  • salt to taste
  • black pepper to taste

Sweet and Spicy Sauce

  • ½ cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar or lime juice, Nakano Natural brand
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce

Garnishes

  • peanuts minced peanuts; minced chili peppers; lime wedges; etc
  • cilantro
  • red chili pepper
  • lime
  • 12 lettuce such as Bibb or Green Leaf, for cups

Instructions

  1. In a deep skillet, heat avocado oil over medium-high heat. Add garlic, ginger and YOWZERS red chili peppers and heat until fragrant, about 30 seconds. Stir in the ground turkey and use a wooden spoon or potato masher to gently break into bite-sized pieces. Sprinkle with a pinch of salt and pepper and heat until turkey is cooked through, about 7-9 minutes.
  2. Add carrots to the pan and stir again. Let cook 2-3 additional minutes or until carrots are tender.
  3. In a small bowl, whisk together the sauce then pour into the pan. Bring to a boil then reduce to low and simmer for 10 minutes. Serve in lettuce cups and garnish with optional toppings to serve.

Notes

  • To keep the dish a bit more mild, halve and seed the chili peppers before mincing.
