Ingredients
Crust
- 1 cup shortbread cookies, crushed
- ½ cup macadamia nuts, finely chopped
- ¼ cup granulated sugar
- ⅓ cup unsalted butter, melted
Filling
- 1 (8-ounce) block cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- ½ cup Key lime juice or lime juice
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ¼ cup macadamia nuts, coarsely chopped
- lime peel, optional
Instructions
- In a small bowl mix the cookie crumbs, macadamia nuts, and sugar. Stir in the melted butter. Press into the bottom and sides of a greased 9-inch pie plate, and refrigerate for 30 minutes.
- In a large bowl or mixer whisk the cream cheese until smooth. whisk in the sweetened condensed milk and lime juice until blended.
- Pour the filling into the crust, and refrigerate, covered for at least 4 hours.
- In a small bowl whisk the heavy whipping cream and powdered sugar until soft peaks form.
- Spoon or pipe the cream on top of the pie, and top with macadamia nuts and lime peel if desired.
