Mafa Chicken
Description
The recipe begins by blending tofu, soy sauce, sugar, garlic, and other ingredients to form a marinade that deeply flavors and tenderizes the chicken. Cutting the chicken breasts into nugget-sized pieces ensures even cooking and an easy-to-eat format. The marination in the fridge, preferably overnight, allows the flavors to develop fully. For frying, each piece is dredged in Wondra flour to create a light, crisp crust.
Deep frying at around 350°F cooks the chicken pieces through to a golden color while preserving juiciness inside. The accompanying dipping sauce combines honey, mayonnaise, and Dijon mustard for sweetness, creaminess, and a mild tang that balances the fried chicken's savory profile.
This dish is versatile with dipping sauce options including sweet and sour, hot mustard, BBQ, or fry sauce. The strong aroma of the marinade means proper sealing during refrigeration is important. Ingredients
Batter:
- 1 package tofu
- ⅓ cup soy sauce
- ⅓ cup sugar
- 6 garlic cloves
- 7 chicken breast
- 2 egg
- wondra flour brand name
- neutral cooking oil for frying, generic cooking oil
Dipping Sauce:
- ¼ cup honey
- ½ cup mayonnaise
- 2 Tablespoons Dijon mustard
Instructions
- Blend the batter ingredients thoroughly in the blender til you have a smooth mixture. Cut up chicken breasts into chicken nugget-size pieces and marinate in the above mixture in the fridge overnight.
- If it is cold enough, we keep the chicken in the garage. If you keep it in the fridge put a good seal over the chicken and sauce because this stuff has a strong smell!!
- Before cooking stir 2 eggs into the mixture and thoroughly coat each piece of chicken in “Wondra” flour. Deep fry at about 350 degrees until pieces are brown and completely cooked.
For the dipping sauce:
- Mix mayonnaise, honey, and mustard. Chill and serve.
Notes
- The chicken marinate has a strong odor, so ensure it is sealed well during refrigeration to avoid aroma transfer in your fridge.
- This fried chicken pairs well with various dipping sauces such as sweet and sour, hot mustard, BBQ, or fry sauce in addition to honey mustard.
