This amazing Mango Fruit Roll Ups recipe requires only 1 ingredient and is the perfect kid friendly healthy snack for the lunchbox. Vegan and Gluten Free.

Ingredients
- 1 1/4 cups mango pulp from 1 big or 2 medium mangoes
Instructions
- Preheat Oven to 160 Degrees F (or as low as your oven can go)
- Place mango pulp in the high-speed blender or food processor. Puree
- Using a spatula, spread the puree onto a cookie sheet lined with silicone or parchment paper. Make sure you spread the puree evenly
- Place in the oven for 2-4 hours or until the mixture is dry. If mixture is not dry leave it longer
- Carefully, peel off the paper and roll it using parchment paper. Cut into strips
- Keep them at room temperature in a zip top bag
- Enjoy!
Notes
- You may use frozen mangoes. Simply thaw before pureeing.
