This easy Maple Dijon Dressing recipe is made with pantry staples and ready in just 5 minutes. Curry powder adds fun, irresistible warmth, which makes it even more wonderful during the fall and winter months - it's perfect for the holidays!

Ingredients

  • ¾ cup vegetable oil (or olive oil, avocado oil, etc.)
  • ¼ cup pure maple syrup
  • ¼ cup Dijon mustard
  • ¼ cup red wine vinegar
  • 1 teaspoon finely minced shallot
  • teaspoon curry powder
  • ¼ teaspoon Morton kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Place all dressing ingredients in a jar or small bowl and use an immersion blender to blend until smooth and emulsified. (See Notes below for an even quicker version!)

Notes

  • Makes about 1½ cups of dressing. 
  • ½ cups of dressing. 
  • For a super-duper quick dressing: Grate the shallot rather than mince it. Then just combine everything in a jar, twist on a tight-fitting lid, and shake vigorously to combine and emulsify. The dressing won't be quite as silky-smooth as when using an immersion blender, but it's still great - and so quick & easy!
