Maple Roasted Peach Salad

This tasty maple Roasted Peach Salad recipe is served with greens, tomatoes, almonds, parmesan and almonds, then tossed with a tangy maple vinaigrette.

For Maple Roasted Peaches

  • 2 peaches
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • salt
  • black pepper

For Salad

  • 15 oz baby greens
  • 1/4 cup almonds toasted
  • 2 tablespoons dried cranberries
  • 1/2 cup cherry tomato
  • 1/2 cup cucumber
  • 1 oz Parmesan Cheese

  • vinaigrette
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons Dijon mustard
  • salt
  • black pepper

Instructions

  1. For Maple Roasted Peaches
  2. Preheat oven to 400 degrees Fahrenheit
  3. Cut peaches in half. Remove the pit and cut into slices
  4. In a bowl toss the peaches with the maple syrup, olive oil, salt and pepper until the peaches are completely coated
  5. Spread peaches on a greased sheet pan and roast for 15 minutes
  6. Flip the over and roast for 15 minutes more
  7. Remove from oven and let it cool for a few minutes
  8. In a small bowl, place all the vinaigrette ingredients together and mix vigorously using a whisk
  9. In a salad bowl place all the salad ingredients and slowly add the vinaigrette until your desired flavor is achieved (you may not need all the vinaigrette)
  10. Serve and enjoy!
